Ingredients:
3 cups (750 mL) Water
1½ cups (375 mL) Granulated sugar
1¼ cups (300 mL) Lemon Juice
1 tbsp (15 mL) Grenadine
Graham wafer pie crust (8-in./20-cm)
1 cup (250 mL) Simply Egg Whites™, well shaken
½ cup (125 mL) Granulated sugar
1. Stir water into sugar to dissolve. Bring to a boil in a small saucepan and simmer for 2 minutes. Remove from heat and stir in lemon juice and grenadine. Pour into a shallow pan and freeze.
2. Break frozen mixture into chunks and blend until smooth. Spread into crust. Freeze for at least 4 hours.
3. Use an electric mixer to beat egg whites for 1 minute. Add sugar gradually, beating until stiff peaks form. Swirl over lemon layer. Freeze for 30 minutes.
4. Preheat oven to 400°F (200°C). Place frozen pie on a chilled baking tray. Bake for 5 to 7 minutes or until meringue is golden.
